The concept
A simple, fast, good quality formula that enables one to enjoy the authentic flavours of Aquitaine. The Assiette de Pays (Regional Selection) is a single savoury, sweet or sweet-savoury dish made up of regional products from local producers or regional companies mostly operating on a small-scale. It is based, as far as possible, on traditional recipes. The selection is a way of sampling local produce, and is always accompanied by a glass of wine or a local drink of some sort.
Restaurants offering these selections will prepare and present them in a simple an original manner, respecting all the criteria for quality. Restaurateurs are the region’s ambassadors, so do not hesitate to ask them for information; they are sure to recommend some wonderful places to visit and will always be able to tell you where to find the nearest tourist office.
